Flowers can be eaten, although artichokes are actually considered vegetables. Artichokes are popular as flowers in bouquets, but they are also a popular guest in the kitchen. The flower bud – which grows on a thistle-like plant – is unopened if used for cooking, with a cylindrical or oval shape. Numerous leaves are folded around the flower base. The outer leaves are tougher and usually peeled off, but closer to the heart the artichoke becomes wonderfully tender and slightly fleshy.

Storage advice

  • Transport and storage: A temperature of 4˚C is optimal for transporting and storing artichokes.
  • Shop: Prevent the flower buds from drying out by giving them a spot on the refrigerated shelf.

Recipes & preparation tips

Artichokes do not require much preparation: just remove the outer leaves before further processing the flower buds. They can be used as a pizza topping, for example. Artichokes are also a tasty surprise in a sandwich. And they make an excellent dip with a difference.
