French haute cuisine has heavily contributed to tarragon's reputation as a fresh herb. Its uses in French recipes are varied. One culinary masterpiece is lemon sole rolls with béarnaise sauce, which can be found on the EAT ME website. The sprigs also work well as a decorative element in a mango shake.
